Homemade Maple Applesauce

Here’s a quick and easy recipe that is a total home run in my house. We were looking for a delicious side dish for dinner the other night, and we have just an overabundance of apples in our house right now (because its fall in Upstate New York!). So, I whipped up this Homemade Maple Applesauce which my kids absolutely love. I think its great that there is zero processed sugar in this while it being super flavorful and seems very rich. Trevor even commented that it was just like apple pie filling. This is just a great example of...

Roasted Tomato Soup

As soon as the weather gets cool and crisp, I immediately just want to make soup. It drives Trevor nuts because I would love a good homemade soup any night of the week, but we start to get in ruts of Turkey Chili and other old standbys. This Roasted Tomato Soup was the perfect bridge from summer to fall. We had a summers-end bumper crop of the last of our tomatoes that literally filled a huge mixing bowl.  I’ve wanted to try this recipe for quite some time, and it really didn’t disappoint. Just a fair warning: this isn’t...

I always love to hear what things people are discovering and loving (to see if I would love them as much to) so here’s a little recap of what I’ve been loving lately: Recipes: I’ve been loving quick and easy meals lately, including these summery Caprese salads. I made one a few weeks back and another last night, and its just the perfect way to use ultra-fresh summer tomatoes. I usually layer sliced tomatoes...

I Have No Idea What to Do

This has quite possibly been the weirdest few days I’ve had in a long time. After two weeks surgically attached to the girls while Trevor was in Louisiana, I spent the weekend almost completely alone.  Well, not super alone. I’ve been working, but Trevor took the girls and Beau to camp for the long weekend. I couldn’t go with them since I did have to work through Labor Day weekend (shout out to all those in higher ed working through the holiday weekend). While I totally enjoyed the peace and quiet, it was just super weird. I’m used to...
