Hey there! Its been a while since I’ve talked about some of my favorites when it comes to recipes, food, motherhood and life in general. I always love to hear what things people are discovering and loving (to see if I would love them as much to) so here’s a little recap of what I’ve been loving lately:
I’ve been loving quick and easy meals lately, including these summery Caprese salads. I made one a few weeks back and another last night, and its just the perfect way to use ultra-fresh summer tomatoes. I usually layer sliced tomatoes and fresh mozzarella first then drizzle with olive oil and a balsamic reduction, and finish it all off with a light amount of salt, pepper and fresh basil. It’s so simple, but a really quick and easy side dish to go along with anything from the grill (we served it with grilled pork chops).
I’ve already made this Pumpkin Bread once, and I’ll definitely be stocking up on canned pumpkin to make more! It was a huge hit at a recent pre-K playdate we hosted at our house.
I’ve also been obsessed with fun pie lattice works. Its really a real form of art to get a beautiful pie. I made a braided crust recipe when we were in Maine, and a friend sent me a fun Facebook video that was circulating a while back from So Yummy and I’d love to try some of those creations!
I’m really obsessed with reading articles about grocery shopping and saving money, especially from some of my favorite bloggers like Ambitious Kitchen. I loved her round-up of favorite healthy Trader Joe’s products. I’ve also saved her Thai Green Beans to try some night too!
I’m adding this Skillet Chicken with Roasted Carrots from Cooking Light to next week’s meal plan. We desperately need new healthy weeknight dinners.
I really want to make these Brownie Walnut Chunk Cookies from Sally’s Baking Addiction. They look amazing, and who doesn’t love a good brownie cookie?
I’ve never been a running person, but I’ve seriously been enjoying the free C25K app. It gives you a new running workout that you do three times throughout the week. It’s a great way to build endurance and keep your motivation up. I’ve been doing over 2 miles during my lunch hour, which makes me feel super accomplished to get it done and over with and have the rest of my day.
To help fight the boredom on the treadmill, I’ve been listening to a ton of podcasts. I cruised through Up and Vanished, which was really interesting. I love true crime stories like that and really getting into a story. It was super interesting and I really recommend it to anyone who likes crime shows. After a glowing recommendation from a co-worker at Union, I’ve just gotten into “How I Built This” from NPR. It’s a deeper look at how entrepreneurs have built their businesses, overcome adversity, etc. I’ve already listened to the the episodes on Spanx, AirBNB and Kate Spade. I can’t recommend those two podcasts enough (especially for fellow people with long commutes!).
This all-natural facial sunscreen from Coola has been my absolute favorite beauty product for a while now. It goes on matte and has a really light cucumber scent. It’s a little bit moisturizing, but really helps protect your skin (and fight off those gosh darn wrinkles). It’s pricey (about $36 for a bottle), but a little bit really goes a long way!
