Healthy Meal Plan Healthy eating can be really tough on weeknights. It’s usually time-consuming and involves a lot of steps, which isn’t conducive to your happiness when you have two young kids whining for dinner. We’ve been doing a good job of eating delicious dinners that also happen to be good for you. Here’s our healthy meal plan for this week: 

Sunday: One-Pan Pesto Chicken and Veggies 

Monday: Turkey Chili (I made this today for tomorrow’s dinner because it saves time and its always better the next day; this recipe will also be posted on Tuesday!) 

Tuesday: Crockpot Pork Tenderloin with Sweet Potato Wedges 

Wednesday: Caramelized Onion, Sausage and Sage Stuffed Acorn Squash

Thursday: Cashew Chicken Stir Fry with Broccoli and Brown Rice 

All of these recipes are pretty low-effort or I’ll just prep the meal the night before (after the girls are in bed). The one thing I’ve learned through all of the detox and healthy eating is that you absolutely have to plan ahead or you’ll just reach for the bad foods again.
