Vitamin C+I’m the queen of list making so once a week I sit down and figure out what’s for dinner, what I need to buy at the store and what we have on hand. I really try to build meals around the things I already have in my pantry and that I’d only have to buy a few things for. It keeps the grocery bill down, but also uses up things we have laying around the house. 

Here’s what’s on deck for our week:

Sunday: Pulled Pork Tacos with Avocado and Sautéed Peppers and Onions – We have quite a bit of leftover pulled pork from a few nights ago so I want to use that up in a completely new dinner. 

Monday: Citrus Chicken Quinoa Salad – I’m super excited to try this healthy dinner and I’ll definitely report back if its a winner! 

Tuesday: Pancakes with breakfast sausage – I literally have four boxes of pancake mix in our pantry so we really need to use this up with a big “Breakfast for Dinner” night. 

Wednesday: Hawaiian Turkey Burgers and fries – We made this recipe before with chicken and it was a big hit. I’m going to swap in ground turkey (and make a few tweaks) and see how it goes. 

Thursday: Fridge cleaning night – Do you ever have these? A lot of times I’ll make a big egg scramble or we’ll eat a dinner out of the freezer. I’ll go grocery shopping on Friday after work so I want to make sure we eat up the leftover produce, etc. before just buying more!
